Deluxe Vegan Hummus Veggie Wraps

Here’s a great recipe for lunch to take with you to work or even on a hike or picnic as it will travel well if packed as shown. Start with your favorite wraps. I like these “Extreme Wellness” ones because they just sound like they’re perfect for the “Total Health Plan” I follow! Who knows what’s really in them. I don’t dare look.

This is the hummus I buy. I like plain.

Spread a couple of tablespoons over the entire wrap and sprinkle on the cayenne.

Use the TSA approved 3 oz travel size containers for your salad dressing.

When it’s time to actually assemble them, open the wrap and pile on the ingredients on only one side (half) of the wrap. Drizzle on the Bragg Healthy Vinegarette dressing and fold it shut like a taco. Don’t roll it up like a burrito. The hummus will hold it together. You’ll need a plate since it might be a little drippy. Your friends will be green with envy as they eat their microwave burrito and you enjoy these super fresh veggie wraps. Only about 250 calories a piece, depending on the wraps you choose. Good luck!

Gypsy Chili

This quick vegan chili is surprisingly good!

Ingredients

  • 2 tablespoons olive oil
  • 2 onions chopped
  • 1 green (or red) pepper chopped
  • 1 jalapeno sliced and diced seeds and all
  • 2 garlic cloves minced
  • 1 teaspoon sea salt or other natural salt
  • 1/2 +/- teaspoon cayenne pepper (instead of black pepper)
  • 2 zucchini halved lengthwise and then sliced thin (4mm) crosswise
  • 2 carrots sliced thin (3mm)
  • 1 heaping tablespoon chili powder
  • 1 teaspoon ground cumin
  • 2 cans (19 ounces each) organic black beans, drained
  • 1 can (28 ounces) crushed tomatoes (use Mexican green chili tomato instead)
  • 1 package frozen corn kernels (or two ears cut off the cob)
  • 1 package extra firm tofu cut into 1cm cubes
  • 2 cups sliced okra
  • 3 cups vegetable broth

Directions

1. In a 5-quart heavy pot heat oil over medium high heat and add the onion, green peppers, garlic, salt and cayenne. Stir for a few minutes until the onions start to melt (about 4 minutes).

2. Stir fry the tofu cubes with the tasty onions et al. It’ll be great if you can brown it a little.

3. Add zucchini, carrots, okra, chili powder, cumin and 1 cup of vegetable broth. Cook stirring occasionally until carrots are crisp tender (about 8 minutes). Add beans, tomatoes, corn and the remaining vegetable broth. Simmer until thickened and carrots are soft (about 30 minutes or half a day in a crock pot). If I’ve left out any ingredients, add them now!

Vegan Chick Pea “Tuna” Salad

I found and just made this recipe watching the Tofu Guru — an awesome one girl cooking show.

  • Dice 1/3 cup celery and
  • 1/3 cup yellow onion and put it in a big bowl. Rinse and drain a
  • can of chick peas and dump them in the bowl. Using a potato masher and/or fork, mash the chick peas thoroughly. Sprinkle on some
  • salt and black and/or cayenne pepper. Add a
  • teaspoon lemon juice. Mix it all together with a fork then add maybe
  • 3 tablespoons of vegan mayonnaise. I use Nayonnaise.

Mix that in and it’s ready to serve. I stuffed it in pitas with sprouts and sprinkled on more cayenne.

Meatless meatloaf

When I was 17, a couple of years into my “vegetarian phase”, my mom discovered a recipe called “meatless meatloaf” in a magazine.  I can’t credit the magazine because that was back in ’75 and who knows what it was.  Redbook or Ladie’s Home Journal I think.  It is a family favorite to this day.  A traditional part of Thanksgiving Dinner.
Now, it’s surely not vegan, and has some unhealthy ingredients, so don’t make a career out of eating this.  But it’s great for Special oKasions.
  1. 4 beaten eggs
  2. 2 hard boiled eggs, diced
  3. 1 cup cottage cheese
  4. 1/4 cup EVOO (That’s extra virgin olive oil if your not a Rachael Ray fan)
  5. 1 teaspoon salt (“Real Salt” is a good brand)
  6. 1 cup chopped pecans
  7. 1 teaspoon sweet basil
  8. 1/2 cup chopped onion
  9. 1 teaspoon minced garlic (I added this to the recipe)
  10. 1 can cream of mushroom soup (I warned you it was not that healthy!)
  11. 4 cups Special K cereal (gluten free alternative: Ancient Harvest Quinoa Flakes)
  • In a giant bowl, add the ingredients in the order listed above mixing it all together as you go.
  • Spray a loaf pan (we use a 2 x 9 x 12 glass baking dish and it barely holds it) with vegetable oil and pour mixture in.
  • Bake for one hour at 350 uncovered.
  • Spread 1 8 oz can tomato sauce (unsalted, this is already salty enough!) on top and cook for 15 more minutes.
Leftovers make great sandwiches cold with mayo and mustard!

Eat a grapefruit before bed and God will send you interesting dreams

It is usually best to sleep on an empty stomach so your body can concentrate on cleansing instead of digestion (see: Breakfast: the least important meal of the day).  But occasionally you might want to add some muscle to the cleaning supplies in the form of a grapefruit.

Grapefruits are powerful cleansers with many health benefits, but they also possess the power to summon dreams.  I can go weeks without recollecting a single moment of a dream, but when I have a grapefruit before bed nine times out of ten I’ll have bizarre, moving dreams.  Maybe not pleasant, but noteworthy!

Recipe:
Wash the grapefruit.  Slice into quarters.  Bend the peels backward and rip out the fruit.  Cut off the hard stringy centers and seeds with a razor sharp knife.  Cut into bite size chunks and eat the whole thing.  Go right to bed.  You’ll see!

“Butternut Squash and Split Pea Soup (Vegan, Gluten Free, Soy Free)
Serves 3-4

  • 1 lb butternut squash, chopped into small chunks or cubes
  • 1 cup green or yellow split peas
  • 3 carrots, chopped
  • 1 onion, chopped
  • 5 1/2 cups water with 1/2 vegan bouillan cube, or 5 1/2 cups vegetable broth <– I use this (Steve).
  • 2+ tsps curry powder (adjust this to taste)
  • 1 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp cinnamon
  • Salt to taste (I used one tsp (Steve))
  • Black pepper to taste (use cayenne instead (Steve))
  • 1 tsp minced garlic (from those little glass jars) <– I added this to the recipe (Steve).

Simply bring the ingredients to a boil, lower to a simmer, and cook until squash and lentils are tender (45 min or so).”

One time I cooked the onion and garlic in a little EVOO first, then added the rest, but liked it better without it. Lighter.


Pomegranate Sangria

This alcohol beverage probably won’t kill you instantly! I like it for parties.

Remember: Alcohol borrows joy from future you and pays you back in suffering. Don’t borrow more joy than you are able to repay.

Ingredients

  • 1 lemon thin sliced crosswise, peeled, deseeded
  • 1 lime thin sliced crosswise, peeled, deseeded
  • 1/2 cup chopped fresh pineapple1 apple cubed
  • 1/4 cup agave nectar
  • 1/4 tsp cinnamon
  • 1 orange peeled cubed
  • 1.5 cups pomegranate juice
  • 3/4 cup cognac
  • 2 750 ml bottles Australian red wine

Instructions

Stir ingredients in a 1 gallon pitcher, cover and refrigerate overnight.
Serve over ice.
Dilute with sparkling water or natural Sprite-like beverage if desired. Sprite can not be used because it contains the inedible, non-food ingredient high-fructose corn syrup.

Anti-hangover tip: Drink half a liter of water between each alcohol drink. Most hangover woes are really just symptoms of dehydration.

 

Chocolate Banana Nut Shake

This raw, vegan shake is a variation on Kristen’s famous “Cherry Chocolate Bomb Shake“ but made with slightly more mainstream ingredients in case you don’t have a Whole Foods Market near by.

Ingredients (add to blender in any order)

 

  • 1 sliced frozen banana*
  • 1 cup frozen cherries
  • 1/3 cup raw almonds
  • 1/3 cup raw cashews
  • 3 rounded tbsp raw cacao or cocoa depending on if you can spend $20 vs. $2
  • Dash cayenne pepper (flavor enhancer!)
  • 1 cup cold water
  • 2 ice cubes
  • 1/2 tsp vanilla extract
  • (And of course sneak in your favorite supplements. You will never know they’re in it.)

Blend it until it’s smooth and creamy like a milkshake! This can take a while in a normal blender. Don’t be afraid to take a taste with a spoon while it’s going to see if it’s done. You don’t want any crunchy bits in a shake!

* To make frozen bananas just peel and wrap in cling film. You can’t peel a frozen banana with the peel on I discovered.

Grapefruit Orange Strawberry Carrot Spinach Green Smoothie

This green smoothie is super fast to make, tastes pretty good and makes you feel great. The spinach and carrots make it more “solid” for digestion purposes, if you catch my drift. Very important.

Add ingredients to the blender any order:

  • 2-4 cups loosely chopped spinach (rotate greens like kale and dandelion greens)
  • 2 carrots cut up as small as your blender requires (1/4 inch thick slices seems OK in my $80 Cuisinart)
  • 1 grapefruit (slice in quarters, rip off peels, cut out hard stringy centers and seeds, cut quarters in thirds or halves)
  • 1 orange (same treatment as grapefruit)
  • 6 strawberries (I leave the green tops and leaves on if they look nice and fresh)
  • 1 tbsp flax oil
  • Supplements you have handy (D3, B complex, multivitamin, Resveratrol, probiotics)
  • 2 cups OJ or pomegranate juice

Blend on “chop” first, then work up to liquefy and let her rip for at least a minute. Don’t want any big globs!
Makes a lot and you will easily go until lunch on this! All you need for a meal! In fact, I bet a person could live on this alone for life.

That’s it! Blend on Max for up to two minutes or until blender motor starts to smoke. Don’t be afraid to try a spoonful while it’s going to see if it’s smooth enough. Makes a lot!
